It is expected that 3000 tons of butter will be shipped to London from New South Wales next season. Stops are being taken also to develop the cheese trade. It is proposed to form a cheese export fund by levying pro mto, contributions on the factories throughout the country, on the same principle as with butter. It is recognised that cheese will have to be made, especially for the English market, on the Cheddar system. This will necessitate a considerable outlay in the introduction of machinery and other plant. It is therefore suggested that one single factory shall be fitted up with all the necessary appliances, and confine its attention to the export trade exclusively. The pro rata contributions will assist in defraying the cost of the erection of the machinery and any losses that might accrue in shipping, while the other factories which contribute towards this fund will reap the benefit of having the market relieved to some extent, and a consequent sustenance of local values. It is pointed out that the factories will thus be able to pay more for their milk, and the whole industry wiu be benefited.
