Sir, — I would like to know if it is correct that Mr Sawers/ Government dairy expert, was engaged in the Wyndham and Stirling dairy 'factories, helping his brdthe-s to make cheese for the winter show? If this is correct, there is very little use other factories soing to the t:ouble-of preparing cheese should there be a show next wint r. We 11 ver hear what Mr Sawers is doing, ag he spends veiy little of' his time in Southland, where the bulk -of tin cheese -is made. Bow many factor-its can Mr Sa * qi : s name that he visited during the past season and gave ,'iustractions how to make cheese? Can he name more than t*o ? I think Mr Sawei's will admit that he spent something less than a month instructing in the Waikoua'iti Daiiy Factory, and at the time he passed othe,; factories without even goin^ near them. If what I< have mentioned is correct, we need not be surprised that prizes w ent the way th«-y did. •

Some parson, who knows very iitfcls about cheese making, writes that Mr Sawers goes about the country and takes his coat off and s _>o\vs the manager how to make cheese (can he name more than throe factories ?), and that Mr Sawers can make first-class butter and cheese Is it not true that Mr Sawers spent a few days in the Edendale Factory some time ago and had full control while there, and on his next visit tested some of his own manufacture (not knowing it was his own make) and classed it about third, or said it was rubbish, and when told that it was his own make, he suddenly discovered that he •would miss the train ? Maybe the writer of the paragraph iirlast week's Witness re Valentine and Sawers as experts will make it his business to find out if the statement re the Edendale Factory is correct. — I am, &c , Dairyman.
