CHEESE COLOURING.

TO THE EDITOR.

Sir, — Permit vie to correct an error in your repurter's notes of the proceedings at the Dairy Conference, wherein I am made to say : "Farmers were instructed to colour their cheese for the winter show." That expression I never use.;d. But I raised the question •' of recommending tbe committee of the A. and P. Society to submit to the judges points on which they were to bo guided in giving their decisions, such points to be submitted to exhibitors to enable all to send an exhibit which would remove all ciuse of complaint as to not knowing w'aat was required of them. And here I stated

wo had been brushed aside on account of colour, which seemed very hard, as we had been instructed by the agent of our Enylish buyer to colour high. The cheese was taken off the shelves and exhibited, and, further, Messrs M 'Nairn expressly states a coloured cheese, a matter the judges seemed to overlook. However, I hope the donors of the csp will come forward and give their views on the subject, as matters as they now stand are very unsatisfactory. — I am &c, Jas. M'lnnes, Manager Inch-Clutha Dairy June 12. Company.
