• Hamburg Cakes.— Chop lib round beefsteak, add a minced onion, one egg, a cup of rolled biscuits, and seasonings. Make into balls and fry. Stale-bread Cakes.— Put stale bread in soak over night in a pint of sweet milk ; in the morning add three, eggs and a tablespoonful of butter. ",• White Fruit Cakes.— One pound of flour, lib of sugar, Hb of butter, lib blanched almonds, 31b citron, one grated cocoanut, whites of 16 eggs, two teaspoonfuls baking powder; flavour to taste. . ( Fig Cake.— Three pints of, flour, one cup of butter, one cup sweet milk, two and a-half cups of sugar, whites , of 16 eggs, three teaspoonfuls of baking powder, l^lb of figs flavoured and cut in strips. Eioe Cake. — Two cups of, cold boiled rice, one pint of flour, one tablespoonful of sugar, half a teaspoonf iil of salt, two teaspoonfuls of baking powder, one egg, and half a pint of milk. Bake on a greased griddle ; serve with honey. Savouby Rick. — Put into a saucepan six cupfuls of stock or broth into which has been dissolved a good allowance of tomato sauce ; add salt and pepper to taste. When it boils throw in for every cupful of stock half a cupful of fine rice, well washed and dried. Let the whole remain over a gentle fire until the rice has absorbed all the liquid; then melt a large piece of butter and pour it over the rice. At the time of serving, and not ■before, stir the rice lightly to separate the grains, but do this off the fire.
