A complete cure for dandruff is said to be effected by washing with a solution of borax once each tenth day, and using bay rum each alternate day. At first use it every day. Pomjie Mange.— Take two pounds of apples weighed after they are pared and cored. Cut them into thin slices, and put them into a saucepan with the thinly-cut rind of two small lemons, half a pint of water, and one pound of loaf sugar. Boil the fruit until it is stiff and dry, Beat briskly for a minute or two, take out the lemon-rind and press the apples into an oiled mould. Put it aside until cold, and turn out before serving. Tune, varying with the quality of the apples, Sufficient for a moderate-sized mould.

Stewed Steak.— Season and lay the steaks in a stewpan, put in half a pint of water, a blade of mace, an anchovy, and small bunch of herbs, a piece of butter rolled in flour, a glass of white wine, and an onion ; cover close, and let it stew till the steaks are tender, then take them out, strew some flour over them, fry them in butter till they are of a nice brown, and pour off the fat ; strain the sauce they were stewed in, pour it into the pan, and toss it up together till the sauce is quite hot and thick, then lay your steaks in the dish, pour the sauce over them, and serve with horseradish and pickles.

ApptE Foot.— Peel, core, and thinly slice three pounds of apples that will cook to a soft pulp ; put them in a stone jar, with sufficient powdered white sugar to sweeten, and two tablespoonfuls of water. Place the jar in a saucepan of hot water and boil till the apples are very soft. Then turn the apples out of the jar into a bowl and beat them into a smooth pulp. Let it stand to get quite cold, and then mix sufficient cream with it to make it the right consistency, or some custard not flavoured. Put in custard glasses, or in a glass dish, and grate a little nutmeg over it. The natural flavour of the apples is most delicate in this dish, and, therefore, any flavouring but the smallest soup^on of nutmeg spoils it.

Milk is a food that should not be taken in copious draughts, like beer or other fluids which differ from it chemically. If we consider the use of milk in infancy, the physiological ingestion that is, of it, we find that the sucking babe imbibes little by little the natural food provided for it. Each small mouthful is secured by effort, and slowly presented to the gastric mucous surface for the primal digestive stages. It is thus regularly and gradually reduced to curd, and the stomach is not oppressed with a lump of half-coagulated milk. The same principle should be regarded in the case of the adult. Milk should be slowly taken in mouthfuls, at short intervals, and thus it is rightly dealt with by the gastric juice. If milk be taken after other food, it is almost sure to burden the stomach and to cause discomfort and prolonged indigestion, and this for tho obvious reason that there is insufficient digestive agency to dispose of it ; and the bettor the quality of the milk, the more severe tho discomfort will be under these conditions.
