Ginger Pudding. — One lb flour, fib suet, lib treacle, 1 tablespoonful coarse brown sugar, half a teaspoonful of ginger and nutmeg, milk enough to mix it stiff. Boil four hoursl

, Chocolate Pudding.— One quart of sweet milk, 3oz grated chocolate ; scald the milk and chocolate together, and when cool add the yolks of five eggs and one cup of sugar ; bake about 25 minuses, beat the whites for the top, brown in tye~ oven, eat cold. Rice Gkiddiiß Cakes, — One cup sifted flour ; two crips warm, new ' milk ; three eggs,,; one cup boiled rice ; teaspoonful salt ; large teaspoonful baking powder. Mix the flour with one teacu'pful of milk, then add the rice — which must be newly boiled, or reheated by steaming, and then beating light with a fork — and thin with the other cupful of milk. (All ol this last cupful may not be required to reduce the mixture to the proper consistency.) Beat the yolks and whites .separately, whipping in the yolk first and the whites last. Add the baking powder mixed .with a little flour, and bake at once. ' Prttme Whip!— Stejp lib nice prunes with very lrbble water, and sweeten with white sugar. Beat the whites of live eggs until stiff and stir to the prunes. Put into a pudding dish, and bake half an hour. Serve when cold with cream.

Plum Cake. — (I.) Scotch : Beat £lb batter to a cream, add £lb sugar, beating well ; then six eggs previously beaten. Have fib peel, Jib almonds, and fib flour already onixed ; stir them gently into the butter, &c , and put the mixture into a tin well lined with buttered paper rising -well over the top. Bake in a slow oven for three hours. Do not shake nor touoh it when in the oven, or the fruit will fall to the bottom. (2.) Beat fib' butter to a cream, add gradually fib brown sugar ; the yolks of four eggs well beaten ; mix one teaspoonful of carbonate of soda with lib flour ; add this to the other ingredients, with a quarter of a pint of milk, Jib citron peel, lib raisins, and one glass brandy ; and last of all the whites of four eggs. Bake in a moderate oven, It should be kept at least a fortnight before it is cut.
