First cut the apples in two and cover with water in the usual way. Then bring them to boiling point and keep boiling gently for half to threequarters of an hour. For every cup of juice a cup of sugar should be allowed. After the juice has been boiled for another 10 minutes, add the sugar, which should have been pre-heated in an oven. Then boil for another 10 minutes. Pour some of the jelly into a saucer and allow to cool for a few minutes. Pull one finger lightly through the top, and, if the skin of the, jelly wrinkles, the jelly should quickly set.
