MINT SAUCE Melt two tablespoonfuls of sugar in an equal quantity of boiling water, adding a good pinch of salt. Chop finely two tdhlespoonfuls fresh mint with a small piece of onion. Place iii sugar and water and then add three to four tablespoonfuls of vinegar.
RHUBARB AND DATE TART Short pastry, half a pint of stewed rhubarb, squeeze of lemon juice, quarter of a pound chopped dates, and sugar to taste. Line a flan ring or plate with pastry. Mix together the stewed rhubarb (it should be cooked as dry as possible), sugar to taste, the chopped dates and the lemon juice; put the mixture into the ring, and decorate the top with twisted strips of pastry. Bake in a moderate oven for about half an hour. Serve hot.
