THE GRADING OF CREAM

TO THE EDITOR.

Sir,—For some time now the factory to which I am a supplier has been giving very unsatisfactory returns for cream. I understood that under the guaranteed price we would be paid a better price this season, but the dairy factory management sees that that price is not paid out too often, as on an average of six cans of cream I may be lucky enough to get one "finest," and all the rest are " first," for which a lower price is paid. I understand that "first" and "finest" are made into the same grade of butter, and sold at the highest price. I have plenty of good grazing for my cows this season; in fact, I think I have better feed than in previous years, and as I spend pounds every year on topdressing and lime I fail to see that my cream is not so good as in the past. I am not the only supplier who is being treated in this manner. There are a great number in this district who say ihey only get one " finest in weeks." There must be something wrong somewhere. It is high time something was done to alter this unsatisfactory slate of affairs. If there is not a change in the grading it will not be very long before there will be no cream going to the butter factory at all; people will take their milk to the cheese factory, and this would be a much more satisfactory proposition. We have to work hard enough for what little we do get without being treated as we are at present. Can any authority on the subject of supplying cream give me any information which would enable me to get better grade for my cream? I have done all I possibly can and nothing makes any difference.—l am. etc.. Dissatisfied. December 2.
