During the past few weeks supplies of cream fish have been plentiful (says the Auckland Star), and Auckland epicures have rejoiced. The cream fish, which is sometimes incorrectly described as butter fish, is a small creature shaped something like a snapper, and its colour is accurately indicated by its name. It seldom exceeds five inches in length. The butter fish, which is an entirely different species, is dark green in colour with curious mottled markings. It nms from 31b to. 51b in weight. The butter fish is skinned instead of scaled, and its delicate flavour is preserved by very light cooking. In Wellington it is esteemed as a great delicacy, and realises top price—as much as 5d a pound—to the fishermen. The butter fish is often caught in nets near Mercury Island, and it ia not uncommon rearer Auckland, but there is j little local demand. I
