CHEESE SUPPLIES
TO TUE EDITOR. ** Sib, —Correspondence with reference to the quality oli cheese supplied to the local market has brought up a question that is of paramount importance to the producers and local suppliers alike. Personally, I am not. at present a good customer, for the one particular reason that my taste is not catered for. Cheese is “on the table ” only occasionally, but when quality to suit is obtained there is soon an empty cheese dish with an Tftgent call for more. The. almost in- ■ evitable answer, however, at the suppliers’ is, “ We’ve run out of that quality.” As an indication of the possibilities of improvement in local consumption, I may ' state that, if the quality desirecl is procurable, I should possibly have cheese_ on the table daily instead of only occasionally, thereby using probably sis to ten times the present quantity. Other persons with whom I have spoken are of tho same opinion.
Cheese to taste, I presume, may be procurable from some grocer or supplier, but grocers and suppliers generally, cannot be depended on to supply the customers’ wants, I do not know ‘whether the fault lies with the producers or tho suppliers, but trust that we llocal users may be catered for in future.—l am, etc.. Mild Cheese. Kensington, June 13.
