TWO NURSERY MENUS

Brains on toast. Cauliflower Celery. Apple Dumplings. The brains should be washed and parboiled and the skin and membrane removed. Either saute them or serve in a good white sauce. The celery can be braised or stewed and the dumplings made with shot crust and baked, or with suet jackets and boiled. Surprise Eggs with Bacon. Cabbage, Carrots. Banana Fritters, Roast some large potatoes in their jackets, and when cooked cut off the tops, scoop a little of the potato out, slip an egg in each, and return to the oven to set. Serve with some lightly cooked fat bacon. Serve the fritters dusted with sugar and squeeze a little lemon juice over.
