Sir, — “ Fisherman ” in your issue of Saturday asks, “ Are there whitebait in any other countries besides New Zealand and England? ” The fry or young fish is caught and used as food (whitebait) in nearly every country, but New Zealand whitebait is considered the best because it is made up principally of one species, and also, because of the lack of bones compared with whitebait in other countries. Great Britain use the young of herrings, sprats, shad, sand eels, gobies, sticklebacks, pipefish, and even small shrimps are detected in among their whitebait. In Italy, Japan, Norway, and Siveden the young of every fish is caught and used as we use our whitebait, and in Germany the young of Cyprinoides that is, fresh water fish, such as carp, gudgeon, tench, bream, roach, bleak, and other pond and river fishes, make whitebait. In the South Sea Islands the young of Teuthis (perchlike fish) is consumed in large quantities.
