VALUABLE RESEARCH WORK. (Per United Press Association.) PALMERSTON NORTH, January 23. _ Reporting to the Massey College Council Professor Riddet, director of the New Zealand Dairy Research Institute, stated that research work on the openness in cheese was being continued, the principal subjects being the influence of the amount of fat in milk upon cheese texture, and the methods of maintaining vital ity of starters, A butter-making experiment had been undertaken to ascertain whether it was possible to export butter carrying the full flavour which would preserve this fullness of flavour till such time as it reaches the consumer in England. Sir George Fowlds was re-elected chairman of the College Council, and Mr P. Levi was re-elected treasurer. The change oyer to the new building is being effected steadily, and sleeping accommodation for 40 students will be available at the beginning of March.
