SCIENTIFIC INSTRUCDENTS DUHEDIIi. \ «S C ‘P A RECIPE FROM NEPTUNE’S LARDER Baked Staffed Herrings Take 2 or 3 good-sized fish from a tin of Moconochie’s Fresh Herrings ; 1J ozs. finely chopped suet or fat; 2to 3 tablespoonfuls of bread crumbs; I teaspoonful mixed herbs and chopped parsley; and a little milk. Wipe fish with damp cloth; split each down the back and remove bones, also the fins. Prepare a staffing made with suet, breadcrumbs, savoury herbs and chopped parsley, and a little milk. Spread the inside of one fish with this, and put the fish on greased bakingtin and cover with the other. Cover the top thinly with brown orumbs, put a few bits of butter here and there, and bake in a moderate oven for about twenty minutes. Dish up and serve plain or with anchovy sauce.
