Slit,- —Some months ago notices appeared in the Times to the effect that a new refrigerating plant had been' erected at Burnside capable of putting through from 2000 to 2500 carcases per day. This news was welcomed hy exporters, who thought that the days of g non-progression were at last to end at New Zealand's parent refrigerating works.

Apparently the management cannot yet get out of the old groove, and about 900 per day is still the average slaughtering; and the filthy paddocks and yards around the worksM-re full of lambs waiting to be slaughtered. Last week a big train full of lambs came in from the south on Thursday night, and on Monday (thia morning) they were still in the yards. Surely works that are fitted with a plant capable of freezing 2500 carcases per diem should not be restricted to slaughtering 900 in a busy season. Lambs kept a couple of days at the works without food are spoiled as an article of food, and it is no wonder that Britishers complain of tasteless, flavourless New Zealand meat.—l. am, etc.,
