A NEW LOCAL INDUSTRY. We aro nh nil times pleased to be able to mark tho progress of new phases in the industrial development ot the colony. Recently a member ul our shift'visited tin: dairy factory at Uosevillo, m-iir .Sawyers' Hay, v.hciv :i very large ■aid commodious building" has been erected for the purpose of converting the milk produced in the dis(riot (which, by the way, is one of the finest in Otago) into cream, butler, and condensed milk. A more convenient site for a creamery could not have been found. It is situated at the bases of a well-wooded hill, and hns an endless supply of thoroughly pure water—the great iksitteratx.n in industries of this nature, whe.ro cleanliness is the great essential. The whole place is in tho most perfect order, and every part of its fittings, eugiues, boilers, &c, &c, with the exception oE tho milk separator (which has been imported), have been made in the colony. The milk is brought to the factory in waggons specially designed for the purpose, and the cans are hoisted up by menus of a lift to the upper stjruy, where the milk is put into a receiving can, ami undergoes the process of weighing. This is done by a beautifully adjusted machine, patented by the Buffalo Company, of New York. There are two of these instruments, and so carefuily are they adjusted that seven dill'erent lota of milk can be weighed at onoo by them, each being capable of weighing half a ton. Adjoining this compartment is the laboratory, where the milk is subjected to tho necessary tests before undergoing the process of condensation. After being weighed the miik is transmitted through tubes to tbi! retiring vats, of which there are two, of a rapacity of GOOgal eaoh. Theao vats are jacketed either for steam or cold water purposes, and in them the milk is very carefully strained, and after p iv>ing through a heater is depo.-ited in what is called a separator, where the cream is extracted and conducted to two cream vats, which are also jacketed for either hot or cold water. Thi< table acts on the rotatory principle, and thoroughly free; ihe butter from any imperfection, s.dt b.ing added at the same time if neces.-ary. In another consi'.u-tmout there aro large vats in which the milk is deposited prior to being condensed. This milk is passed through, a large sieve or strainer covered by six lilys of cloth, so thfit all impurities are thoroughly removed prior to its condensation. This appears to be a very delic.ite operation, and a regular degree of heat must at all times be U-.-pt up.
