Strain and serve with hollandaise sauce poured over. • To make the sauce you require three tablespoonfuls white vinegar,' 2ozs. butter, two yolks of egg, salt and pepper. Boil the vinegar, until reduced to half, then add two tablespoonfuls water, and pour this over the egg yolks. Melt half the butter m a small basin and add 'the egg mixture. Put the basin m a pan of boiling water and stir the contents until they reach custard stage. Remove from the heat and add remainder of butter. If too thick, add a little hot water.
