Mushroom Rolls Ingredients. — Vs Ih. mushrooms, 1 oz. flour, 2 ozs. butter, pepper and salt,** Vi pint milk and rough puff pastry. Method.— Wash, peel and chop mushrooms, and fry m 1 oz. butter. Melt remaining ounce of butter m a pan, add flour and cook the two together. Add milk and stir until boiling. Add mushrooms and seasoning and allow to get cold. Roll pastry and cut Into , squares, put little mixture upon each, fold into a roll, and brush with beaten egg. Bake 25 minutes. Serve with brown sauce. Gingerbread Fingers Ingredients.— l lb. flour, 1 large , teaspoon ground ginger, G ozs. butter. % lb. golden syrup. V* teaspoon soda, 6 ozs, castor sugar and 1 egg. Method.— Dissolve syrup, butter and sugar m a pan; mix flour, ginger and soda, add syrup, etc., to this, also egg. Roll out into a large square piece, put on a sheet and mark with a knife. Bake slowly, 30 minutes. Cut into fingers and >when cold keep airtight. -7 * . '; Oatmeal Biscuits v\ Ingredients. — 7 ozs. oatmeal, 3 ozs,.butr ter, 1 eggi 5 ozs. flour; 3 ozs. sugar. 1 r, tablespoon milk and % teaspoon baking "" powder. Method. — Put oatmeal, flour and sugar 1 into a bowl, rub m the butter, add baking -. powder, and mix to a stiff paste with egg ; and milk. Roll out thinly and cut into ' rounds. Bake slowly for 15 minutes. I Apple Yorkshire Pudding i Ingredients. — H lb. flour, % pint milk, 2 eggs, % lb/ dripping, pinch salt and 3 apples, , Method. — Mix the flour and salt m a „ bowl, add eggs and milk, the latter "■ gradually, beat well. Stand m a cool ' place for 1 hour. Have dripping hot m 1 Yorkshire pudding tin. Pour m the bats ter, and put sliced apples on the top. r Bake 30 minutes and serve with sugar. 5 - . Date Pudding Ingredients.— 6 ozs. flour, 3 ozs. sugar, \' 2 teaspoon baking powder, 1 gill milk, 3" ozs. beef suet (chopped), 3 ozs. stoned dates, 1 egg and *£ teaspoon mixed spice; ' ■ Method.— Chop the dates, put all dry ingredients into a bowl, add suet, dates, - and baking powder, mix with egg and >' milk, "and steam m a greased basin for 2 hours. Serve with white sauce.
