FAKING THE PEOPLE'S FOOD
The prosecutions undertaken by the Health authorities m varions parts of Australasia, show that aniline dyes, a mineral product distilled from, coal tar, are responsible -for ttoe appetising looks of much of th© food served up to customers m the shilling- restaurants and eighteenpenny eating-houses. Instead of being produced by eggs, the rich yellow of the cake is made from chemical dye, waranted harmless unless taken in -big quantities. In soups and custards the same kind of treachery prevails, and the poor gourmet who eschews plain steak and onions to glut his maw an delicacies is m reality filling himself up on false pretences. Usually the boarding - houses and restaurants are the best customers of tne : coloring . fakir, but occasionally the natty little housewife who wishes to coax poor hubby's jaded, appetite patronises the dye fraud.
