NURSERY PUDDINGS. Delicious Gingerbread Padding—Two ounces finely-chopped suet, three ounces breadcrumbs, one tablespoonful of treacle (made warm), two ounces flour, one teaspoonful ginger, one teaspoonful baking powder, half cupful of milk, one ounce of brown sugar. Mix dry ingredients, and moisten with the milk and warmed treacle. Put into buttered mould, and steam three hours. Serve with lemon sauce. Steamed Bread Padding—Required; Six ounces of stale bread, two ounces of flour, three ounces of raisins, three ounces of suet, three ounces of Demerara sugar, one egg, one lemon, half a pint of milk, nutmeg. Boil milk, add bread; reboil, and beat smobthily with a fork; add the sugar. Chop the suet with the flour; add these, also the grated rind and tho strained juice of the lemon and nutmeg to taste. Stone the raisins, and chop half of them. Well grease a pudding basin.

Jam Fritters—Take small stale sponge cakes, cut them in halves, spread a thick layer of raspberry jam between them and press firmly together. Dip each cake in fritter batter and brown in boiling lard. Dust in sngar and serve with vanilla syrup.
