With reference to the Sowell process of : packing butter, the saving in freight will hot be so much as appears at ftrst sight* The butter is pieced in scpiare cases, and then put into kegs, so that there is a clear space on ail sides, these spaces being filled with brine. Owing to their rotundity, the kegs take up much more room, in addition to which they are only partially filled. Sutter experts consider that at the outside the process will not save more than 4s 3d per hundredweight, and that even this amount will probably be eaten up by the cost of the kegs, which will be more than for ordinary butter boxes.
