HOT MUTTON PIES

For these pies take a pound of lean lamb, cut into dice, and season ivith pepper, salt, and a dash of cayenne. Add half a cupful of cold water to make gravy, and five cupfuls of flour with a cupful of lard. R.uh half the lard into the flour; the rest put into a pan with a pint of water, bring it to a boil, and pour into the flour. .Stir and knead until smooth, but do not let the paste cool for a moment, or it cannot be moulded. Do not place the pies closely together, or they will stick and break, allowing both the gravy and the meat to escape' Bake in a hot oven until brown amd crisp. It will require about an hour to cook the lamb thoroughly. Serve the pies piping hot.
