STERILISING WITH HYDROGEN PEROXIDE

A patent taken out. bv Mr Bud cl e, of Copenhagen, protects the sterilisation of milk or other food with peroxide of hydrogen (about, 40deg. C.) to make the action of the peroxide move energetic. The heat may ho applied before -the peroxide is added, and the food may be heated after mixing it with that substance." To avoid having any excess of peroxide present after the sterilisation is effected, the amount required mav be found beforehand -by experiments on a small scale, or the excess may be destroyed by adding, in as small quantity as will suffice?, any sterilised enzyme, such as infusion of common, press yeast. With milk, the best method is to mix with so much hydrogen peroxide that it wil 1 contain 0.35 gramme H 202 per litre, and then to heat to 50deg. C., and maintain that temperature for somei hours. This . quantity will not, as a. rule, leave any excess of hydrogen peroxide in, the milk.
