Speaking to the creamery and factory managers of the KaupoKonui Company recently, the Dairy Commissioner, according to the hi aw era- “Star,” stated . that tiiere was a decided improvement over last year in a number of brands or Taranaki butter. This could be set down, Mr Kin,sella thought, to the better application of freezing power and by the introduction of the starter question, which was specially pushed by the department last season. There was, however, room for vast improvement in a number ef factories so far as cleanliness was concerned, the system of butter-making and the preparation of a good starter. With regard to Taranaki cheese, Mr Kins oil a said that while some brands were fine, others were not, and he feared' that, unless managers became alive to the situation, tne same complaints would come from the other end as were made last year. At some factories cheese was found to be very open in the pressing, and contained sweat holes. The flavour also was not improved by rushing the curd to press too soon. While some flavours could not be entirely overcome, serious faults were due to careless manipulation in toe manufacture. South Island makers had instituted some changes in their sys- . tern of manufacture, principally in regard to the starter difficulty; and he (Mr Kinsella) was pleased to see that there was a noticeable improvement in the Paparoa’s shipment.
