SOME USEFUL RECIPES.
BUTTER BISCUITS. |lb moist sugar, £lb butter, £lb flour, 1 egg. Rub the butter and sugar together, then mix in the flour and egg well beaten, roll out to £in in thickness, flouring the rolling-pin well, to prevent it from sticking; bake on a floured tin for 20 minutes.
SULTANA CAKE. 6oz butter, 6oz sugar, 5 eggs, 9oz flour, 12oz sultanas. Beat the butter to a cream, add the sugar, and beat again for five minutes ; add the eggs one at a time, then mix in the flour and sultanas, pour into a buttered tin, and bake in a moderate oven for one hour and a-quarter. ./NUN'S CAKE. | 4oz butter! 4oz flour, a small nutmeg
grated, 4oz powdered, sugar, z eggs, l ■ dessertspoonful of cold water. Beat the butter to a cream, add the sugar, flour, nutmeg, water, and the yolks of the eggs; mix thoroughly, then stir in the whites mixed to a stiff froth, work together, pour into a buttered tin, and bake in a moderate oven for one hour. LEMON ROCK BISCUITS. 2 lemons, |lb loaf sugar, 1 egg. Rub the yellow rind of the lemons on the sugar, pound it in a mortar, and mix it gradually with the white of an egg whisked to a froth; beat thoroughly, drop on sheets of buttered paper, piling in little heaps, and stand in the oven till pale yellow and hard. MADEIRA BUNS. I £lb flour, 2oz butter, sifted sugar, / grated rind of % lemon, i teaspoonful powdered ginger, |-oz caraway seeds, a little nutmeg, 1 egg, i wineglassful of shorry. Rub the butter into the flour, add the sugar, grated lemon rind, powdered ginger, caraway seeds and nutmeg; mix with the egg, well beaten, and sherry, bake in pattypans for 15 minutes. POTATO SOUP.
Take 21b of potatoes, wash/scrub, and peel them, and cut in slices. Take two leeks and shred them small. Put 2oz of fat in a stewpan, add the vegetables, put the stewpan on the fire and cook the vegetables for about five minutes. Then add two quarts of boiling water, pepper and salt to taste, and leb all cook till it is soft enough to mash. Pass it through a wire sieve or colander. Return the soup to the saucepan, add one pint of milk. When it boils up sprinkle in two teaspoonsfuls of crushed tapioca, and boil for 10 minutes. This,makes an excellent meal for children with'some bread soaked in it.
