DAIRYING IN MARLBOROUGH.

The Spring Creek Dairy Factory was opened on Wednesday last, Mrs Hanna, wife of the Blenheim manager of the New Zealand Loan and Mercantile Company, setting the machinery in motion. The Marlborough Daily Times gives the following particulars respecting the factory : A short outline of the process from the time the milk comes to the factory may be interesting to some of our readers. The cans are taken off the, ik.ii oajjjw esofij-mta’raqTi mb \ r.inf uItL

cart and drawn up to a platform on which stands the weigh can and scales. After the milk is weighed and tested it is shot through a'cloth strainer into a vat, and from there it goes into the heater or -pasteuriser, thence into the separator, which is capable of receiving 320 gallons of milk per hour, The accomplished, the skim milk goes through a'centrifugal pump, is forced into pipes and conveyed into a tank, from where the supplier obtains his share. The cream passes along into a receptacle known as the Lawrence Cooler aud then into the churn, receiving about thVee-qdarters of an hour’s it is turned into the more* solid article. When that is brought about,, the butter is' taken on to a revolviug .table and, by means of corrugated rollers, it i eceivesa thorough patting. The table is removed bodily into the cooling and all that remains to be done is making the butter up into pounds, wrapping it in cloth, and packing in boxes, which hold from. 56 to 581 b. The cool chamber Is not yet finished, but everything is now in readiness to complete, and it will be so in a day or two. ' The machine is one of the -latest from the well-known makers, J. and E Hall. Its work is done by means of. chemicals, and the principal factor is the continual circulation of cold brine. A pipe runs from the machine and is connected with hollow iron walls, and in those the brine is sent. On taking a look round outside, completeness in detail is again everywhere visible.' .The first thing that meets one’s eye is an arragement for thoroughly cleansing the milk cans, first, by rinsing them in a wooden tub, and then placing „them over a steam pipe, which, needless to say, makes a good scour. The water supply is admirable,t\Vo gallon tanks are kept constantly fully and the overflow is amply provided for. The factory throughout is a model one, and in Mr Marshall it has a model manager—one who thoroughly understands his work, and takes a pride in turning out a good article. The machinery runs like clockwork, due partly to the care exercised by Mr Garnham in its erection, and partly to its superior quality. The factory is now open to receive milk in any quantity and it is hoped the farmers will respond with good supplies. The company who have inaugurated the industry in the district deserve recognition by the farmers.
