THE DAIRY INDUSTRY.

One of the best advertisements this Colony has had for her dairy industry was the fact that the finest quality of butter shipped to London on the last trip of the Doric realised as high as 124 s per cwt. Although the London market was bare at the time, yet there must have been good butter present from other countries, and our product ruling so high would raise its importance in the eyes of buyers. As a rule, when any article reaches top prices it creates a name for itself, and that special brand or make is afterwards inquired f ° The shipment of butter to London has now closed for this season, as England is well supplied with butter from the Continent m April and the latter end of May sees the Cork market in full swing. Colonial butter will not, therefore, be in much demand before October and November. Our makers and shippers have, therefore, good time to prepare for next season. The success of the Doric’s butter is another still further argument of the great importance of paying proper attention to uniformity in make and package. Our farmers are barely awake to the fact of the immense trade which cau be done with the Mother Country in butter and cheese. Taking the latest statistics from England we find that the United Kingdom contains in round figures some thirtv-mne millions of people, who consume annually m round figures 100,000 tons of butter and 100,000 tons of cheese, costing over eighteen millions sterling. This is exclusive of what is exported to other countries. With such a consumption there is a prospect of a big trade being done by New Zealand. There is no secret in the trade. Supplv the finest quality that can bo made, and the market will receive it with open arms. Denmark takes the lion’s share of the English import of butter ; and Denmark s secret is uniformity, both in make and package.
