Foamy Sauce. —Boat the whites of two eggs to a foam, but not to a stiff froth, and add slowly a cupful of fine sugar, and a little grated lemon peel ; pour over this (stirring con.inualiy) a cup of boiling milk, and, lastly, add the juice of a lemon, when it is ready to serve. Instead of . the lemon many people prefer a tablespponlnl of currant jelly melted m a spoonful of boiling water. , Golden Sauce. —Boat a heaped tablespoonful of hatter into a cupful of fine sugar until light, stir into this the yolk of three eggs, and three tablespoonsful of milk or cream, and add the stiffly beaten whites of the eggs. Set the basin over a saucepan of boiling water, and stir till it thickens, but no longer. A little vanilla may be added when the sauce is done, or for those who like it, a little brandy or sherry may be used instead of the vanilla. Yours sincerely, M.
