THE FRIENDLY EXCHANGE.

In this column we propose to have pleasant chats and interchange of ideas with our readers upon passing matters of domestic and social interest ; and that it may be made an instructive and profitable feature we invite correspondence of inquiry and information on all subjects that can possibly be of service to the home and our common humanity, and the Editress hopes that her appeal will meet with a hearty and generous response. Letters must he written on one side of the paper only, and addressed to “Elise,’ New Zealand Mail. Correspondents will please give real name and address in addition to their nom-de-plume, not for publication but for editorial introduction. Contributions for the ‘ Exchange ’ must be sent in not later than Monday. Dear Elise, —I have been making seme jelly lately whioh is liked, and I will give you the recipe, as I have never seen it in print. Prune Jelly. —Boil lib of prunes in a little water till quite soft, soak a packet of gelatine in about a cup of water, then pour the hot prunes over it to melt it (when suffi. cieutly soaked), add some sugar, and a little citric acid, and enough port wine to make the whole quantity to a quart. Put either in a wet mould or in glass dishes. Will you give me a recipe for hard sauce as soon as you can, as I often tee it ordered but do not know how to make it ? Yours sincerely, M. Hard sauce is simply equal quantities of sugar and butter beaten together uncooked.—Ed.
