It is not always true thatthe old ways are best." Modern brewing can and does produce better beer than any produced in the past. The old method of brewing fails completely to eliminate contamination and harmful bacteria, which makes all the difference between a beer of high quality and an inferior product. At the most modern brewery in New Zealand, where Waitemata is produced, contamination of every kind is excluded.
