GRASS AS A FOOD

VEGETABLE SUBSTITUTE SYDNEY, July 2 Sandwiches of mown grass could be substituted for vegetables if they became unobtainable or too high in price, the professor of bio-chemistry at Sydney University, Professor H. Priestlev. said to-day. Grass had vitamin C, which prevented scurvy. However, he did not recommend an entire diet of grass. Jt contained much moisture and waste material.

"There is no artificial substitute for vegetables," said Professor Priestley. "Fat more fruit is the alternative. Citrus fruits and tropical fruits, particularly yellow, can substitute for green vegetables. Potatoes also have vitamin C, although in less quantity. "How do you suppose they get on in Darwin? Everything has to be imported, and you cannot import green vegetables. They have to rely on fruit. I once met a boundarv rider from the Northern Territory wno had been brought in with scurvy and beriberi. His mate had escaped scurvy by cooking a weed called 'fat hen' and eating it as his green vegetables."
