HOME-MADE VINEGAR "TN case no other reader has sent in directions, here is my well-tried recipe for home-made vinegar," writes M M. "Boil 4 or 5 quarts of water, and lot it cool. Stir in lib. treacle, lib. brown sugar, pour into a jar* and add the jelly-like 'plant' or 'mother.' Cover with muslin to exclude flies. It is ready for use in a few months, when tho process may ho repented." Cleaning Grimy Wallboards "To clean wallboards, take a littlo dry plaster of Paris on a flannel and rub the boarding with this till clean," advises M.H. "Hub gently and as much as possible in one direction. Another way is to rub the stained portions over in one direction only with a peice from the inside of a stale loaf, two or three days old." French Bonbons This is how M.H. makes French bonbons, for which an inquirer asked the recipe recently:—Beat tho whites of 2 eggs stiff, beat into this 2 tablespoons of thick "cream and lightly stir in enough icing sugar to make a rather stiff paste, about as stiff as , breaddough. Break off little pieces of the paste and roll into balls about the sizo of walnuts. Now put 6oz. of sifted icing sugar into a saucepan, gradually stir in 2 tablespoons of boiling water, and heat (not boil), gently half-minute. Then add a few drops of almond or lemon essence.' Stir to mix, dip in tho balls of paste on a hatpin or fine skewer, and when covered set out on buttered paper to dry. It is better to set the paste aside /or 12 hours before dipping it in tho covering. Portions of the paste may be tinted with a few drops of cochineal if desired, and are made additionally nice if flavoured with friiit juice, orange, lemon, grapefruit, pas-f. sion fruit, raspberry, currant, strawberry, etc. Requests Candied Peel.—"Anxious,' Avondale, wants a simple recipe to candy lemon or orange peel. Cooking Pipis.—"Seaside" would be grateful if someone would tell her how to cook pipis so that they are free from sand when served. Boiling Tar.—Could anyone toll stains" how to remove stains made by boiling tar, spilt on the "white enamel tray of a gas-stove and also on the linoleum and floorboards? Fancy Icing: "An Inquirer," Waihi, wants to know how to make a plain icing, suitable for decorating, with a patent " icer." (Sorry, have no space to repeat waffles and crumpets recipes; but you could get a, back number of the paper.) . - -
