DAIRY PRODUCE

BUTTER AND CHEESE RESULTS OF JUDGING DOMINION CHAMPIONSHIP "In comparison with the previous winter exhibition, this year's catalogue shows an increase of approximately 40 per cent in the number of butter entries, and a decrease of close on 22 per cent in the number of cheese exhibits," said Mr. E. C. Wood, dairy produce grader, on behalf of the dairy division judges at the Auckland Winter Exhibition. "The hot and dry season experienced throughout the Dominion created difficulties for cheese makers, and probably accounted for the slight decrease in this year's cheese entries. "The general quality of the butter exhibits was uniform and satisfactory," he said. "At the same time the general standard was hardly equal to that of last winter, notwithstanding the longer period of storage prior .to judging on that occasion. "The clasis for export butter, selected at random from cool stores' stock during March, was well patronised, entries being received from dairy companies in the Auckland, Taranaki, Wellington and Nelson provinces. The quality of many of the entries was equal to that of much of the butter made specially for show purposes and the successful exhibitors in particular are to be congratulated on the choice quality of their entry. "Cheese exhibits came forward in a very clean and attractive condition," Mr. Wood added. "Flavours were mostly clean and sound, but the body of a number of entries was hardly as firm as might be desired. On the whole, the exhibit was of uniform quality and exhibitors are to be congratulated in achieving this very necessary characteristic in the manufacture of cheese."
