This is M.U's recipe for blackberry wine, recently wanted by one of our readers. "Gather the berries quito ripe on a dry day if possible. Place them in an open vessel, Pour on enough boiling water to cover them, and mash them up well with the hands or a masher. When they are well pulped, put a cloth over the vessel and lot stand from three to four days till the pulp rises to the top and forma a crust 011 it. Thon draw off the liquor under the crust carefully into another vessel, leaving all the crust and waste pulp behind. For every gallon of the liquor drawn off, stir in lib. of sugar. Place the sugared liquor in a cask with a bunghole, filling it right up to the bunghole, and let ferment for six to ten davs till no moro runs over at the open bunghole. The liquor in the cask must always be kept up to the level of the bunghole, especially at the beginning of the process, with a little of the liquor held back for the purpose. Then when no moro flows out at the bunghole, close it up securely and let the cask stand six to twelve months, (the longer the better) when tho wine will be ready for use or for "bottling."
