Mincemeat into Chutney
I I J One pound n.incemeat, Jib onion, { 3 12 red chillies (the dried kind), ] I half-pint vinegar, 2oz peppercorns, j j Joz mustard seed', lib apples, peeled, j ■ cored and cut in slices (not essential, \ 3 but adds bulk), pinch of salt to \ 3 blend flavours. Mince the onion : « coarsely. Fry in a little hot butter \ | until golden brown. Add to the boil- j | ing vinegar, together with all the \ j other ingredients,, including the mince- •: j meat. Cook gr.ntly, turning often * I u)ilh a wooden spoon for one hour. { I Bottle, and you have a delicious \ | sweet pickle or chutney. j j 1
