MORE SAUCE RECIPES Sauces of various kinds are always useful, and our readers have sent a lot of nico recipes lately, so here are some of them:— First comes this method of making Worcestershire sauce, which is different from the one we published last week, since it has raisins and brown sugar in it. It was sent by Miss M.W. (Hamilton). Take four pints vinegar, soz. raisins, 21b. brown sugar, 2oz. black popper, 2oz. allspice, 2oz. cloves, 2oz. garlic, \oz. cayenne pepper, one dozen chillies, and one pint Indian soy (which you purchase at the chemists). Boil all 45 minutes, strain and bottle.

Apple and Onion Ketchup.—(Sent by "Elsie.") Take 12 tart apples, 2 minced onions, one teaspoon mustard, one teaspoon ground cloves, two teaspoons ground cinnamon, one small tablespoon salt, one pint of vinegar, 6oz. of sugar. Pare, quarter and core the apples, place them in a, saucepan with water, and simmer till soft. Rub this apple pulp through a sieve. Add the other ingredients allowing a quart of apple pulp to the above. Simmer the ketchup for one hour.

Plum Sauce.—(Sent by F.W.). Take 61b. plums, 21b. dark sugar, 6 teaspoons salt, 2J pints vinega.r, loz. packet mixed spice, ioz. pepper, a little garlic. Boil one hour and strain through colander. Chocolate Sponge

Among those who have assisted "Newly-wed" with recipes for a chocolate sponge sandwich are Mrs. C. (Thames), M.H. (Auckland), Mrs. M.L. (Auckland) and J.T. (Papakura). Here is Mrs. C.'s, which she says is excellent:—Take 4oz. butter, one cup sugar, two eggs, one heaped cup flour, two teaspoons cocoa, one teaspoon baking powder, pinch salt, half cup milk. Cream butter and sugar, add eggs, then the milk, and, lastly, the dry ingredients. Bake in sandwich tins 20 minutes.

For the iilling cream well 2oz. butter and three heaped tablespoons of icing sugar, add vanilla, then half teaspoon powdered gelatine dissolved in one tablespoon boiling water, and beat well again. Ice top with chocolate icing. Date Crispies

"Henrietta" is sure to welcome this recipe for date crispies, from Mrs. M.L. Take 1$ cups sweetened condensed milk, one cup stoned dates, one teaspoon cinnamon, J,-lb. cracker biscuit crumbs. Thoroughly mix together and drop by spoonfuls on to buttered baking sheet. Bake 15 minutes in a moderately hot oven. This makes about three dozen crispier.

Broken Casserole What a pity it was about your casserole which was broken, Mrs. R.K., because glass ovenware is so useful. However, Mrs. M.L. has a suggestion as to how you can mend it, so let us know how you get on. She says: " Reduce quicklime to a fine powder and make it into a paste with white of egg. Add a little whey made by mixing milk with vinegar. Use the least possible quantity in bringing the edges of the broken glass together."
