COFFEE ESSENCE
To make coffee essence, put one pound of freshly-ground coffee into a jar with two .pints of boiling water and a pinch of salt. Place the jar in a pan of boiling water and keep tho water as near boiling point as possible for three hours. Then strain the coffee into a pan and boil it quickly till the liquid is reduced to one pint. When cold, pour it into a bottle which has a tightly-fitting cork. It is then ready for immediate use, one teaspoonful of essence to one cupful of boiling water or milk being the usual proportion. If the essence is not wanted for immediate use, add half a gill of brandy before pouring it into the bottle and this will preserve it for any length of time.
