Is Milk Dangerous?
The great value of milk in j the diet is now proven, and wo ; have no doubt that we must j have' more of it. The existing j supply is liable to infection, : and is, no doubt, occasionally infected; but it is only rarely that there is evidence of milkborne disease, and it wtrnld be absurd to label it as dangerous. Even if no improvement were possible, it would be better to have more of it. Such risk as there is can be guarded against by heating the milk sufficiently to kill any dangerous germs. On a largo scale this can bo done by pasteurisation, and if milk is properly pasteurised and'protected it is safe. On a small scale, as in the country, it can be scalded or brought to tho boil. Its food value is not appreciably diminished, though repeated heating is undesirable.
