BEETROOT JAM

A delicious jam can be made from beetroots. Take 31b. of beetroots, wash them well, and cook them in boiling water with a pinch of salt and juice of a lemon. When nearly ready, pour the water away, peel tho beetroots, and shred them finely. Dissolve 21b. of sugar, add the shredded beetroots, bring to the boil slowly. Then cook for quarter of an hour, add loz. of ground ginger, 2oz. each of blanched almonds, Brazil nuts and walnuts, and boil until the whole mi.vture jellies. Put in warm jars. This jam will keep for several months.
