ICING A CAKE
When icing a cake during the summer months it is extremely difficult to prevent the icing from running down the sides when' only the top is to be iced. In the case of a cake with a moulded top this is particularly difficult, and the only way to ensure success is to sprinkle the top of the cake with a little flour. This will prevent the icing from running, and the flour will not be detected in the flavour of the cake. If the cake is plain, ground almonds sprinkled thickly over the top will hold the icing and add flavour to the cake itself.
