PEANUT BROWNIES Since the publication of a recipe for peanut brownies last week in response to a reader's inquiry, more recipes have been sent in by N.C. (Hikutaia), E.A.W. (Warkworth), F.E.T. (Napier) ar.d L.S. (Cambridge), to all of whom sincere thanks are sent. As space is limited, however, only one of these recipes can be given, and that has been selected because it is entirely different from tlje one which appeared last week. It is as follows:—lngredients: One cup flour, one cup grated coconut, i cup sugar, J cup butter or good dripping, one tablespoon cocoa, one egg, one teaspoon baking powder, \ cup chopped peanuts. Cream sugar and butter, add the egg and then the cocoa and beat well; add coconut, sift in flour and baking powder and lastly the nuts. The mixture must be stiff as if for rock-cakes. Drop small lumps on to a greased oven tray with a fork, and bake in moderate oven 10 to 12 minutes. These are very nice, and if kept in an air-tight tin or jar will keep fresh for some time.
