KEEPING PARSLEY
Frequently in an emergency it is discovered that there is no parsley in the house. Even with care parsley soon withers, and if it is kept in water it does not remain fresh for more than two or three days. It may, however, bo preserved for use in the following manner. Place a bunch of parsley, after removing the stalks, into a saucepan of hot water and allow it to simmer for several minutes. Remove from the water, drain, and place in a fairly hot even for a few minutes. Finally store it in airtight bottles for future use. Always rinse the parsley well before use after removing it from store.
