TO BROWN A PIE

Sometimes it is difficult to brown the top of a meat or fruit pie. If tho heat in the oven is too great it browns before the pio is thoroughly cooked, and if the oven is moderately hot tho pastry is frequently not brown enough. The best plan is to cook tho pie in a moderate oven and when almost cooked take it out and brush over tho top with a mixture of sugar and water. Replace tho pio in the oven and it will brown evenly in a few minutes. It should not bo left for long, as it becomes brown quickly.
