USE OF ORANGE PEEL A piece of orange peel in the water in which a plum pudding is boiled will give a rich and fruity flavour, and will also collect any grease which may boil out. Butter beans and haricots will cook more quickly if the salt is not added until the beans arc done. Sprinkle chopped parsley over them just beloro serving, and the fresh flavour will be appreciated. Cinnamon extract is well known as a preventive against cold. A few drops in warm water at bedtime, at the veiy first sign of a cold, is unfailingly beneficial. If tho extract is not at hand, put a large teaspoonful of powdered cinnamon in a cup and fill it up hot milk, as in making cocoa; add a little sugar. This is a cure which children will welcome. As a spice, in puddings, cakes and gingerbread, cinnamon not only adds piquancy, but also wholosomcness.
