BUTTER AND CHEESE.

/ DOMINION AWARDS MADE.

CLASSES AT WINTER SHOW.

GOOD, UNIFORM QUALITY. / The New Zealand butter championship, decidod in connection with tho Auckland Winter Exhibition, which will open to-day, has been won by tho Rangiwahia-Ruahine Dairy Company, Rangiwahia, near Mangaweka. The cheese championship was won by the Dalefield Dairy Company, Carterton. The Auckland provincial butter championship was won by tho Tauranga Cooperative Dairy Association, which was also successful last year. The association has now won the Winstone Cup outright. Tho provincial cheee championship was won by tho Waima.na Daily Company.

Large entries were received in all classes and competition was keen. In commenting on the exhibits the judges expressed tho opinion that tho average quality was uniform, and quite up to show standard.

In butter tho packing and general appearance were neat and attractive, and the boxes, with a few exceptions, were ol! uniform size and shape. In tho class for unsaltcd butter a good test of the kaeping quality of New Zealand buttijr was provided. The entries in that class were not made specially for the competition, but were selected at random from incoming export consignments during March. They were considerably ovsr three months old when opened for judging. In an -entry of 26 factories the average scoring was 93.1 points, and that gave a definite idea of the high standard of excellence and the long-keeping quality of New Zealand's export butter.

In cheese the.general quality was good. With a few exceptions the bodies were silky and meaty, the texture was close, tiiie flavour sound and the finish satisfactory. In the class for export cheese tilken from store during March, the quality was pleasing and the cheese had matured well. However, greater care could have been taken with the dressing of. the cheese in that class. Details of the awards are: — BUTTER.
