DATE CREAMS.
put !«'o cupfuls of crystal sugar and half cupful of nvilk into an enamelled saucepan, hoil for five minutes, take off tha fire and stand the saucepan in a dish of cold water. Add essence to taste. Stir the mixture constantly till nice and creamy. Select nice glossy dates, cut a slit in each, remove the stone and the skin ivhich is sometimes round it, and fill them with (lie'cream. The same cream is used for walnuts, prunes, almonds, etc.
Water creams are made with the same amount of sugar, using water instead of milk, and adding nearly half a teaspoonful cream of tartar.
