TO CLARIFY DRIPPING.
To clarify dripping cut the dyipping from the jar and take off any sediment. Then put it in a large basin, pour plenty of boiling water over it, and stir till it is all dissolved. Let it stand till firm and cold. Scrape any sediment from the bottom of it, break it up, and melt in the oven. When solid it is ready for use. It is a good substitute for butter in cooking, provided it is not strongly flavoured with anything like onion cooked in it beforehand.
