OVER-RUN IN BUTTER-MAKING.
Sir, —In the report of the 2sew Zealand Co-operative Dairy Company's' balancesheet, as published, I note tie over-run is 21.77 per cent. , New, I understand about 20 oer cent, cl our butter xnanafactored is made Irofe whole milk received at the dried xaoSt and casein factories, etc., from which we have to stand all mechanical losses in separating and under the most favourable conditions « know you cannot produce more than an 18 per cent, over-ran where whole milk is separated at the factory. it would be interesting to know just what the actual over-run was from the home-separated a earn received, as it seems to me we ara carrying the dried milk suppliers on our backs to about 2 per cent. ox. our output I would suggest that the over-run from each factory of ours be published separately, and we would then find ooi: which group of suppliers were standing i the loss. X BtrrEEß-FAX.
