APPLE CAKE.
Peel and slice sharp apples and cook them with castor sugar and one dessertspoonful of water until they are pulpy. Next take a breakfastcupful or more of very fine breadcrumbs and fry them in a tablespoonful of butter until they are pale brown. Butter a mould or deep pie-dish and coat with white breadcrumbs. Fill with alternate thick layers of apple pulp and fried breadcrumbs, cover with greased paper and cook in a moderate oven about 30 minutes. Turn out on to a dish and dredge thickly with castor sugar. Serve warm, not hot.
